Which version of Interface should I get, iPhone or iPad?

If you don't need the ability to test & run mockups on the iPhone, get the iPad version, the iPad version supports both mockup for iPhone project and iPad project.

Can I create iPhone mockups on the iPad with Interface HD?

Yes.
Can I create iPad mockups on the iPhone with Interface?

No, iPhone's screen is too small for mocking up iPad project.
Can I export my project to PDF?

Yes, both versions support exporting projects to multi-page PDFs.
How about jpg?

Nope, since a project can contain more than 1 mockup screen, you are better off with PDF export.
I can't change the width of the left split view panel, I can't change the height of a toolbar, etc....

The Interface layout engine follows guideline set by Apple and only create legit widgets, currently the iOS SDK didn't provide a way to change the width of the split view left panel. Because mockup can be exported to Xcode, we can't just fake it. To put it this way, if it is hard to achieve in Interface, it is probably hard to achieve in Xcode too.
How does the Xcode export feature work?

3 options: You can share the exported project by email a link to download the Xcode project, email the Xcode project itself as a zip, or save the Xcode project as a zip in your devices.
Why is Xcode export a cloud service?

To save our time and your time. The export service is a complicated application, we decided to develop the export service in Ruby code rather than doing it natively in the app, by this way we can write more efficient codes and provide better support.

Apple updates iOS SDK from time to time, because the export service is a web service provided by us, we can keep improving & updating the service to ensure that you will always get a working Xcode project.

We respect your privacy, project data submitted to our server are used for export service only and we will not disclose this information to any 3rd party. Zip projects are removed immediately from the server after downloaded to the device, shared projects that are not accessed in 7 days will be automatically removed by the server.
I shared my exported Xcode project via a link, can I removed the link to my project later?

There is a typo in your screencast, *Communicity* is not a word.
